Boneless chicken |

Olive Oil |

Tin of Tomatoes |

medium Onions |

Garlic |

Ginger |

Green Chillies |

Chilli Powder |

Method |

Wash all raw
ingredients. Finely dice onions. Peel and grate the Garlic & ginger. Thinly
slice the green chillies. Dice the chicken or cut into strips. |

Heat oil (or Ghee), once hot add
the onions. Cook the onions for about 3-5 minutes until the onions are
translucent. |

Add the Cumin seeds
and coriander seeds and fry for 2 minutes before adding garlic, ginger and
green chillies. Cook for a further 5 minutes. Stir regularly.

Add all the spices,
Add a small amounts of water if too dry and cook for 10 minutes. keep
stirring to get a fine sauce. |

If possible, liquidise the chopped
tomatoes and add to the pan. On full heat cook for 5 minutes. Add the
diced chicken. |

|
On medium heat
continue stirring for 10 minutes. Leave to simmer on low heat for 10 –15
minutes. Garnish with fresh coriander leaves |
