Aubergine & Spinach Bartha Back to recipes

 

Serves 4

 

Ingredients

450g  Aubergines (1lb)

450g  Spinach (Fresh or tinned) (1lb)

60ml  Cooking oil (2 fl oz)

115g  Plum Tomatoes (4 oz) finely chopped

1       HDM Spice Shop Bartha mix (22g)

 

Method

1.       Pre-heat the oven on Gas mark 5, 190ºC (375ºF)

2.       Using a fork, prick the aubergines and then bake them for 30-40 mins.

3.       Peel the aubergines and cut into small pieces or mash them.

4.       Heat the oil to a high temperature  in a large pan. Add the onions until they go a golden brown and stir constantly.

5.       Gradually add spices, tomatoes, aubergine &   spinach. Mix well for 5-7 mins.

6.       Reduce to a low heat, cover pan and allow to  simmer for 30 minutes.  Stir every 5-10 mins.

7.       You can increase cooking time to reduce water.

8.        Place in a serving bowl & garnish with fresh    coriander

          leaves.

 

Serve with chappatis or naan bread.
