Recipe 1: Boiled Basmati Rice

Ingredients

8oz   Basmati Rice

2 pts Salted water

Knob of butter

Wash 250g (8oz) of Basmati rice thoroughly and soak for 20 minutes for softness.  Add rice to 2 pints of slightly salted water and boil for 10 minutes. Drain using a colander or sieve. ·

Recipe 2: Pilau Rice

Ingredients

8oz   Basmati Rice

Small onion

1 tsp of Cumin seeds

1tsp Garam Masala

1tsp Salt

425 ml water

Wash 250g (8oz) of Basmati rice thoroughly and soak for 20 minutes.

Fry thinly slices of onion, until lightly brown. Add 1tsp of roasted cumin seeds (dry roast in Frying pan for 2-4 minutes), 1tsp of Garam Masala & 1 tsp of Salt.  Then add rice and stir for  2 minutes. Finally add 425ml water (just over 1/2 pint). Bring to boil then cover with a lid. Simmer for 10-15 minutes on low heat, stirring occasionally until water is fully absorbed. Try not to stir too much as the rice can go mushy.  Remove from heat and allow to stand without removing the lid for 5 minutes. Then serve.
